Pinot Noir "Signature" - Domaine Bouvet-Jabloir
Intense - Neuchâtel Pinot Noir
The property
Since 1923 and with four successive generations, Domaine Bouvet-Jabloir has perpetuated their know-how in the Neuchâtel town of Auvernier. Currently at the head of the family estate, two brothers: Alexandre the convinced oenologist, then joined by Dimitri from the Lausanne hotel school and passionate sommelier.
The vineyard
Vineyard
Partly from the plots "Les Sagnardes and "Les Tires" at the top of the village of Auvernier. This vineyard is located at an altitude of 500 m in soils mainly of reworked Würmian Moraine, with disturbed and straightened stony complexes. This vineyard of old vines was planted by their grandfather in the 60s, which provides a greater concentration of aroma thanks to the low yield.
Grape varieties
Pinot Noir 100% - Neuchâtel AOC
Vinification and ageing
aging in oak barrels for 12 months.
